How long have you been running the business? I have only owned the business for the past two and a half months, but I’ve worked here for over five years.
What was on the premises before? I remember it as Tilbury’s Architects, but a customer also remembers a sweet shop being on the premises.
What do you specialise in? We’re famous for our baguettes, which are cooked on the premises, but we also sell lots of traditional sandwiches.
What’s your best selling filling? Without doubt that’s our chicken, bacon, mayo and avocado mix on a white baguette - at £2.60.
Any unusual fillings requested? Two come to mind - a baked bean baguette and a brownie in a baguette have both been ordered recently.
I don’t want a sandwich - what else have you got? You can have a salad box, a jacket potato, fresh fruit, a sausage roll, or one of our many cakes, cookies or muffins. We also sell a large range of hot and cold drinks.
Who uses your sandwich shop? A wide cross section, including County Hall staff, lawyers, people visiting the courts and people working in local shops and businesses. At this time of the year we also get tourist trade.
Is there anything that irritates you about your customers? It really irritates me when customers reach the front of the queue and then decide to make a phone call on their mobile instead of ordering a sandwich.
